Ingredients
2 tomatillos, scrubbed, small dice
1 large ripe peach, pit removed, medium dice
1 cup fresh blueberries
1 small red onion, very thinly sliced
2 tablespoons Peach Champagne Vinegar
2 tablespoons Extra Virgin Olive Oil
Kosher salt and freshly ground black pepper
Instructions
Combine the tomatillos, peaches, blueberries, and red onions in a mediumย
bowlย and season with salt and pepper. Drizzle with the vinegar and olive oil.
