Ingredients
2 English muffins, split
2 large eggs
6 slices Canadian Bacon
2 slices American cheese
Salt and pepper
Butter or oil for cooking the eggs
Instructions
- Toast the English muffins
- Cook the Canadian bacon in a hot cast iron pan until hot and crispy around the edges. Remove to a paper towel lined plate.
- Place 2 silicone egg rings in the pan and melt 1 tablespoon of butter or heat oil, over medium heat, in the pan that the Canadian bacon was cooked in. When the butter has melted use the stems on the silicone rings to move the rings around and create a seal. Break one egg into a small bowl and then gently transfer it to one of the silicone rings. Repeat with the second egg.
- Cook the eggs until the whites are set. Carefully remove the rings and with a spatula gently flip the eggs. Continue cooking for a minute.
- Remove each egg and place on bottom of each toasted muffin. Season with salt and pepper to taste. Top each egg with 3 slices of Canadian Bacon. Place a slice of American cheese on top of the bacon and top with the remaining half of the English muffin.
Notes
This could also be made with scrambled eggs cooked in the rings. And regular cooked bacon could replace the Canadian bacon. Sausage patties could be another variation. Any combination would be delicious!
