Breakfast Sandwiches, or Mommy McMuffins as my son called them as a little boy, are a great way to start the day. And they are wonderfully portable.

Silicone egg rings

They are also quite easy to make. I used to find that the most difficult part was trying to get the egg to be the right size to fit the English muffin. That was until I found these great silicone rings (Affiliate Link) on Amazon.

The first time I tried them I was a bit disappointed. The eggs oozed out under the ring. It wasn’t horrible but I still had to trim the egg to fit the muffin. i figured that there must be a trick that I was missing. While we were camping at Delaware Seashore State Park our son, the breakfast king, made breakfast sandwiches for us one morning. This led to a discussion on how best to use them.

Trick for perfection

Apparently Brian had the same issue that I did the first time he used the silicone rings to make his eggs. What he discovered was that there was a really simple fix for the problem. All you need to do is place the rings in your pan and melt your butter or heat your oil until it’s nice and hot. Then use the stem to move the rings around to create a good seal. And then break an egg into a small bowl and gently pour it into the ring. Repeat cracking the egg into a small bowl and transferring to each ring until you have as many eggs as sandwiches.

This technique worked perfectly for me! I could even cook the egg until set and then remove the ring. This allowed me to flip the egg for an over easy preparation. I now had perfectly cooked and sized eggs for my breakfast sandwiches.

So to make two complete sandwiches for Steve and I, I toasted two split English muffins until golden. I cooked my eggs over easy. Heated six slices of Canadian bacon until hot and a little crisp on the edges. I placed an egg on the bottom half of each muffin and seasoned the eggs with salt and pepper. Then I topped the eggs with 3 slices of Canadian bacon each and crowned the stack with a slice of American cheese. After the cheese melted enough to drape down over the bacon and eggs I placed the top of the English muffin over the entire stack creating an absolutely yummy breakfast sandwich. Nothing beats biting into that sandwich and have that hot yolk ooze out into your anxiously awaiting mouth!

A luscious breakfast sandwich composed of over easy egg, Canadian bacon and American cheese on a toasted English muffin. Yummy and portable!

Ingredients

Scale

2 English muffins, split

2 large eggs

6 slices Canadian Bacon

2 slices American cheese

Salt and pepper

Butter or oil for cooking the eggs

Instructions

  1. Toast the English muffins
  2. Cook the Canadian bacon in a hot cast iron pan until hot and crispy around the edges. Remove to a paper towel lined plate.
  3. Place 2 silicone egg rings in the pan and melt 1 tablespoon of butter or heat oil, over medium heat, in the pan that the Canadian bacon was cooked in. When the butter has melted use the stems on the silicone rings to move the rings around and create a seal. Break one egg into a small bowl and then gently transfer it to one of the silicone rings. Repeat with the second egg.
  4. Cook the eggs until the whites are set. Carefully remove the rings and with a spatula gently flip the eggs. Continue cooking for a minute.
  5. Remove each egg and place on bottom of each toasted muffin. Season with salt and pepper to taste. Top each egg with 3 slices of Canadian Bacon. Place a slice of American cheese on top of the bacon and top with the remaining half of the English muffin.

Notes

This could also be made with scrambled eggs cooked in the rings. And regular cooked bacon could replace the Canadian bacon. Sausage patties could be another variation. Any combination would be delicious!
