Like many of you I am busy preparing for the upcoming holiday. In my case Passover.

As we do every year we are going to our friends’ for the seder. But unlike the other years Steve and I are spending the entire weekend with our friends. They don’t live far away. Its only about a 50 minute drive to their condo on the Intracoastal. But staying at their home always feels like a vacation! We are going early so that I can help Jackie cook for our seder and Steve can keep Alan company. Jackie and I will prepare all of the savory dishes together and I really can’t wait! But since I am usually assigned dessert I will make those at my house and bring them with me along with my fabulous knives and cutting board; items that Jackie doesn’t have because cooking is not her favorite thing to do.

I have already made the fabulous Caramel, Chocolate and Almond Covered Matzo from Smitten Kitchen. And I tried out Paula Shoyer’s Chocolate Quinoa Cake from Food 52 last week. It is rare that I make anything that I consider inedible. But that cake was an epic fail! I suppose it was the quinoa that gave it a horrible taste but Steve and I both spit it out and threw away the entire cake without a second hesitation. I was so glad that I had not wasted anymore of my good chocolate on a glaze. The cake was not only weird tasting but looked more like a big brown bundt shaped pancake.

So this year’s dessert will be an assortment of cookies for Passover. In addition to the Matzo Crack, as Steve and I fondly refer to the Smitten Kitchen recipe I already made, I will make Peanut Butter Cookies drizzled with Dark Chocolate and Chocolate Walnut Cookies. Oh and another batch of Matzo Crack because we have been nibbling on it all week and their probably won’t be enough left to bring with us on today!!!

In celebration of Passover, my birthday, my son’s birthday and our 49th Wedding Anniversary I will be taking a 3-4 week vacation and will resume posting when I return. I will have lots to share plus a big announcement so stay tuned for my return.
