Lobster is my Favorite Food

Okay, I confess, Lobster is my favorite food. So much so that when Steve and I went to Maine in the summer of 2006 for a week to do an art show Steve promised me lobster everyday and he delivered on his promise! There were even days we had lobster twice. Most of the time we went to the Lobstermen’s Co-Op and bought lobster meat that I brought back to our RV and transformed into one delectable dish or another. And once or twice we ate our lobster in a restaurant. I remember one dinner that started with Lobster Bisque and continued with grilled whole stuffed lobster. I was in heaven. And just last week when it was my birthday Steve went to COSTCO and brought home two gorgeous lobster tales for me to prepare for my birthday dinner. I boiled them first for about 10 minutes in heavily salted water. Then I split them in half, brushed the halves with a little olive oil and seasoned with salt and pepper. Next I cooked them on a hot grill to finish cooking through and add that touch of smokiness that only grilling can. I also grilled pencil thin asparagus and a couple of limes. When I took the lobster off the grill I squeezed the slightly charred limes over the succulent lobster meat and accompanied it with an easy mustard sauce. Just take about a quarter cup prepared mayonnaise (I like Hellmann’s) and a quarter cup coarse grained mustard (I used Plochman’s) and place in a small bowl. To this add salt , pepper and a couple of tablespoons Dry Vermouth and whisk it all together until completely blended. For a change of pace sometimes I switch out the Vermouth with Vodka. The sauce is also fabulous on stone crabs or crab cakes. You can bet this will taste almost as good as the lobster at Mac’s Chophouse in Georgia, which is to die for!
