Two weeks ago my beloved Aunt Rhoda was laid to rest. She was 97 years old and lived an amazing life. To know her was to love her. Everyone who ever met Rhoda Abrams would tell you the same. She immediately made newcomers feel that they had been part of her family forever. My RhoRho was truly beautiful inside and out. I will miss her everyday.

I will think of her each time I see a butterfly because she loved them so much. My cousins sent be a gorgeous necklace of hers that is full of turquoise butterflies and I feel her hugging me when I put it around my neck.

Cutting RhoRho’s Brownies is easy with this cutting tool and a plastic mat to protect my cutting board.

And when I miss her the most, I can make a batch of her fabulous brownies, which to me are as perfect as she was.

The post below was one of my very first blog posts that I ever published. I honor her today by republishing it now along with fresh pictures added to the original. I have also updated the instruction a bit to be a little easier to follow. Let’s just say that, I have learned a lot over the years.

I have been craving my Aunt Rhoda’s (of RhoRho’s Brownies fame) yummy brownies for weeks so yesterday I decided that I had to make a batch.

RhoRho’s Brownies

RhoRho’s Brownies are really so easy to make and they come out perfectly every time.  They are not too sweet and sort of cake like, perfect with a cup of coffee or a glass of milk.  Ironically while I was stirring the melting sugar, butter and chocolate over boiling water it reminded me of just how special the person who gave me the recipe is.

Twenty Three of RhoRho’s Brownies – the 24th was about to go in my tummy. Oh so yummy!!!

Rho Rho married my mom’s brother Mike.  Uncle Mike became a brilliant surgeon and founded his own hospital in Rancocas, New Jersey.  My aunt raised their three daughters, volunteered her services to charitable organizations, entertained regularly, did not know the meaning of the word no and always looked stunning.  She is the type of person who you can talk with about anything and everything and she will always be open and honest with you.  In high school when we were asked to write about what woman we admired most, all of the other girls in my class were writing about Jackie Kennedy.  Not me.  I wrote about Rhoda Abrams the woman who had all of the qualities that I hoped to have someday.  I hope I have made her proud of me.  Since my mother passed away in 1987 she has been so much more that just an aunt to me.

RhoRho’s Brownies

Deep, dark, chocolatey cake like brownies that are not too sweet and perfect with a glass of ice cold milk!

  • Total Time: 35 minutes
  • Yield: 24/48 brownies 1x

Ingredients

Units Scale

1/2 lb. unsalted butter

4 ounces Baker’s unsweetened chocolate (I actually prefer Sharffen Berger or Valrohna)

2 cups sugar

4 eggs, beaten

1 1/2 cups flour

1 tsp. baking powder

pinch of kosher salt (preferably Diamond Crystal)

2 tsps. vanilla

Instructions

Preheat oven to 350 degrees F. Liberally coat a 9-inch X 13-inch pan with baking spray.

Melt butter, chocolate and sugar in double boiler or a heat proof bowl set over a post of simmering water.  Let cool. In a separate bowl whisk together the flour, baking powder and salt. Add the eggs, and remaining dry ingredients to the melted butter/chocolate/sugar mixture. Mix together until well blended. Pour into 9 x 13 pan and bake in 350 F oven for 25-30 minutes or until a toothpick inserted in center comes out clean.  Allow to cool in pan on cooling rack.  Cut into 24 squares for large serving or 48 rectangles for smaller pieces.

Notes

The only time I EVER crave a glass of cold milk is with these brownies!!!
