Everything Needed for Lemon Jello Shots

Before I tell you about the easiest most clever jello shots ever, I want to keep those of you who know about our upcoming planned adventure up to date. And for those of you who have no idea what I am talking about Steve and I plan on selling our home in Florida, hopefully before next summer, buying a 40 foot RV with 4 slides, and traveling North America full time for as long as we can (or want to). In 2006 we traveled for 6 months in our 36 foot Damon Intruder Class A motor home with 2 slide outs. I was making and selling one of a kind jewelry at the time so we visited 23 states doing art shows each weekend and sightseeing during the week. We barely broke even but we had the time of our lives. We learned that someday we wanted to become “full timers”. Everything we are doing now is geared toward accomplishing that goal. But since we are not going to be retired we have a plan for how we will earn our money on the road. Steve will join Workampers which will enable him to work at the RV parks that we stay at in exchange for our RV site. I plan on teaching cooking classes based on cooking for small spaces
in the RV parks. In addition to writing this blog I will start another one based on our travels but still food related. Steve and I will become “The Traveling Locavores” and that will be the name of my new blog as well. We plan on eating and cooking only locally sourced ingredients in whatever area we are living in at the time. Our hope is to spend a minimum of a month at each stop unless our next destination is too far to reach in one day and then we will stop for the night. I hope to be able to interview chefs and farmers alike where ever we go and take lots and lots of pictures. And added to all of that we will publish small cookbooks for every area we visit. I’m optimistic that I will also be able to write for a variety of magazines as well. So in order to be successful I am honing my writing skills and practicing my photography. I’m painting 2 foot by 2 foot sections of wood with a different color on each side as prop tables for pictures of my plated food.

While I’m honing my skills Steve is hard at work to earn the money to buy our next RV. So as soon as we have enough money in the bank we will start searching for our dream coach. We know we will be buying used but we are not afraid to renovate. We are experienced in redoing a house or two so the RV should pose no problem at all. In fact we look forward to creating a showplace.

And now, ta da, for todays recipe. I titled this post “A Party on a Plate” because Jello shots always seem to get a party started. I found this very clever idea in the July/August issue of Food Network Magazine and replaced half of the water that was called for with vodka. They were a huge hit because they tasted really, really good and they were so much easier to eat than the typical jello shots that you have to pry out of little cups. You definitely should give them a try for your next soiree.

Ingredients

4 small oranges

4 large lemons

1 1/2 cups vodka, divided

2 (3-ounce) boxes orange gelatin

2 (3-ounce) boxes lemon gelatin

Instructions

Cut the lemons and oranges in half vertically, from stem to tip. Scoop out the flesh using a grapefruit knife or spoon. Place the rinds in a muffin tins to keep them level. Bring 3/4 cup water and 3/4 cup vodka to a boil and add the two boxes of orange gelatin, mix and cook, stirring for 3 minutes. Pour the mixture to the brim of each orange half. Repeat with two boxes of lemon gelatin and lemon halves. Refrigerate at least 3 hours or overnight. Before serving slice each citrus half into thirds creating wedges. Makes a total of 48 wedges.
