Spring was an awesome time to visit Canyon Lake, Texas. And our friend Jacki, who lives there, couldn’t wait to take us for an authentic TexMex lunch at Monterrey Café in nearby New Braunfels TX.

One of the reasons that Steve and I love RV life so much is that we get to spend quality time with friends and family all across the country. It also allows us to explore new areas that aren’t tourist destinations. Texas has so many charming little towns dotted all over the vast state. Each time we visit the Lone Star State we discover, and often rediscover, the wonderful commonwealth.

Exploring New Braunfels and having lunch there was no exception. Driving up to this quaint little spot for our repast, I immediately noticed wonderful murals on the building. I love when art unites with good food, it draws me in. It makes me very happy. Plus we were starving! LOL
We were welcomed to Monterrey Café by the hostess. This is a place where culinary passion meets warm hospitality!

Since Jacki has been to Monterrey Café many times, we relied on her recommendations to guide our lunch choices. And while we waited for our lunches we enthusiastically enjoyed freshly made tortilla chips and salsa.

Chicken and Cheese Quesadilla with Fresh Salad
Steve selected the Chicken Quesadilla with Fresh Salad. It was cheesy, full of chicken and very flavorful. The salad of juicy ripe tomatoes, lettuce, herbs and onion rounded out the lunch making it filling and healthfully tasty.

Chicken Fajitas with Salad, Corn, Rice and Refried Beans
Jacki and I both ordered the Chicken Fajitas with all of the fixings. Our plates were overflowing with grilled chicken, pepper, onions, corn, fresh salad, rice and refried beans. Accompanying our fajitas were warm flour tortillas, guacamole, green and red salsas and sour cream.
It was a veritable feast! Now that our bellies were full, we headed out to explore New Braunfels with Jacki as our gracious tour guide.
